Bóymoder Pastry Cream
Ingredients
- 480ml milk (2 cups)
- 6 egg yolks
- 40g cornstarch (¼ cup)
- 133g sugar (1⅓ cup)
- 1 tablespoon vanilla
Instructions
- Separate the 6 egg yolks into a heat-safe bowl
- Add the sugar to the egg yolks and whisk until the color lightens up a bit
- Sift the cornstarch into the egg yolks and whisk until theres no lumps
- Add the vanilla and mix it in
- Warm up the milk on medium heat, swirl the pot around occasionally so nothing burns
- Once the milk is simmering (but not boiling!), take it off heat
- Take about ½ a cup of the milk and slowly drizzle into the yolks while whisking vigorously
- Now add the rest of the milk in while whisking
- Add the mixture back into the pot and place it back into medium heat
- Whisk constantly, after a few minutes it'll start to thicken, once it does, take it off heat and keep whisking for a bit more
- Place onto a bowl for it to cool down (and cover with plastic wrap against the cream itself so it doesn't form a skin)
