Bóymoder Semolina Pasta
Ingredients
Per person/portion
- 150g semolina flour
- 75g hot water
- ½ teaspoon salt (a pinch)
Instructions
- Mix the salt into the water
- In a bowl with the semolina, add the water and mix with a spoon
- Combine it into a ball with a spoon then your hands
- Place the ball of dough into a counter and knead until it's smooth and pressing on it makes it bounce back
- Wrap it in a damp tea towel or plastic wrap so it doesn't form a skin and let it rest for at least 20 minutes
- Shape the dough, the simplest way are small gnocchis
- Use your hands to roll the dough into a snake about 1-3cm (0.3-1in) wide depending on how you want it
- Cut them into many small squares/rectangles
- Cook the pasta

Notes
- Semolina pasta doesn't have any eggs, meaning it's great to dry and store. See: drying pasta
